The restaurant's original Fremont location was opened in the winter of 2020, and was a third concept from team Joe Sundberg, Rachel Johnson, Patrick Thalasinos, and Chef Liz Kenyon. This same team was behind award-winning Manolin and Rupee Bar.

For both locations, Old Salt both smokes fish and makes bagels in-house. The fish is sourced from Northwest Bounty, a local fish purveyor. Bagels are made using Shepards grain flour.
